The secret to making this taste “Chinese,” I think, is sesame oil.  If you don’t have that, you could easily use red peppers, salsa, hot sauce, etc. to make it taste like the country of your choice!  I like to make a large batch of the sauce, then just add fresh scrambled eggs when I want to eat it.  (I don’t think storing scrambled eggs in sauce would have many positive results.)  This particular amount of sauce fed me 3-4 times.  Here is the link to the original recipe: “Rasa Malaysia Tomato Eggs.”  This website rocks, so you should check it out!

TASTE: Asian, oily, a little spicy, filling comfort food

LAZINESS LEVEL (1-3): 2 (moderately lazy)

EFFORT REQUIRED: scrambling eggs, repeatedly tasting a sauce


Ingredients

A can of diced tomatoes (of course!)

A can of tomato sauce

Approx. 1/2 tsp salt (to taste)

Lots of black pepper

A few dashes of red crushed pepper

1 tsp sugar

Approx. 2-3 TBSP cooking oil

Approx. 2 TBSP sesame oil (to taste)  **sesame oil is quite strong, so add a little at a time!

Lots of garlic (fresh or minced would be best!)

Chopped scallions to top (or add chopped onions to the sauce and cook)

3 large eggs (per serving)

 

Directions

Using some of the cooking oil, scramble eggs and set aside.  Try to keep the eggs in large, steak-like chunks for the maximum level of yum!  Now, wipe out the same fry pan with a paper towel.  We don’t judge around here.  Put all the other ingredients in the fry pan and cook until it’s warm and you’re happy with the flavor.  To serve, put the eggs in a bowl, then ladle the sauce over the top.  Top with scallions.  Eat.  Imagine your sweet, old Chinese grandmother offering you seconds.

Sorry for the lack of posts.  You’ll be shocked to know that I’ve been too lazy to update the blog.  🙂

Anyway, this recipe has ruined my life in the best kind of way.  There are only 2-3 minutes standing between myself and a warm brownie.  Obviously, I wrestle past those 2-3 minutes American Gladiator style every chance I get!  There are lots of brownie-in-a-cup recipes circulating out there and you may find a better one (if so, please share!).  But, this has been my staple sweetie for a couple of months now.  I’ve been experimenting with the recipe and I found that substituting about 1/8 tsp baking powder for the dash of salt makes the consistency more fluffy and more even.  **Be careful when you experiment with baking powder and baking soda!  Too much can really ruin the taste of your baked goodies!  (Not that I know that from countless mistakes….)

TASTE: Chocolate magic

LAZINESS LEVEL (1-3): 3 (very lazy)

EFFORT REQUIRED: owning a mug, pushing microwave buttons


Ingredients

4 TBSP flour

2-4 TBSP sugar (2.5 is usually good for me)

2 TBSP cocoa powder

2 TBSP cooking oil

2 TBSP water or milk (If you have cream, try 1 cream and 1 water.  Some melted butter might also work, but I haven’t tried it yet!)

Approx. 1/8 tsp or less baking powder (or a dash of salt)

Directions

Put all ingredients into an average size mug and mix well.  Stir once before adding the wet ingredients for the best consistency. (use a butter knife or chopstick to get the flour out of the bottom edges).  The mix will look like delicious Play-doh. Cook in the microwave for 1-2 minutes (1.5 usually works for me).  You could top if off with ice cream or hot fudge or your whatever you’d like!

Homemade Cheese Pizza

This isn’t super lazy, but it’s as lazy as you can get when making homemade pizza.  (I made 2 of these pizzas from scratch in 45 minutes tonight!) Prepare to get flour all over yourself and your kitchen.  Don’t worry, the sense of self-satisfaction will be totally worth it!

TASTE: Italian

LAZINESS LEVEL (1-3): 1 (some exertion)

EFFORT REQUIRED: kneading and rolling dough, measuring things, getting your hands messy

You can easily half this recipe and still get 2 personal pizzas from it (or 4 pizzas from the original amount). Actually, it’s better to keep the dough thin since it bakes up like a biscuit. I cook the dough for 10 minutes, then take it out and add the toppings before finishing cooking. (TIP: Fold up the edges of the rolled dough to form the “crust.”)

Toppings:

Pre-made pizza sauce (or you can throw your own together with tomato sauce, olive oil, salt, and garlic)
Shredded cheese (be generous!)
Lots of oregano, basil, and garlic
Optional: frozen spinach or other toppings of your choice.

Bake for an additional 5-7 minutes until the cheese is browned. Now, aren’t you proud of yourself? Instagram this beauty!

Emergency Chocolate Banana!

It’s 12AM and you NEED CHOCOLATE!  Don’t panic!

TASTE: Chocolate

LAZINESS LEVEL (1-3): 3 (very lazy)

EFFORT REQUIRED: peeling a banana

Chop up a banana.  Cover it in chocolate syrup or sprinkle it with NesQuik.  Repeat as needed.

Bam.  Problem solved.

Bean Chili

Adapted from a vegetarian cookbook.  So easy.  The ultimate comfort food of winter!

TASTE: SPICY

LAZINESS LEVEL (1-3): 3 (very lazy)

EFFORT REQUIRED: opening cans, some stirring


Ingredients

1 can black beans

1 can kidney beans or chili beans or chickpeas (any bean will do!)

1 can corn

1 can diced tomatoes + 1 small can green chilies (or about 2 cups salsa)

Salt, lots of pepper, and garlic (to taste)

1 tsp-1TBSP cumin (to taste)


Directions

Put all ingredients in a sauce pan.  Cover and simmer on medium heat, stirring occasionally.  Cook until some of the liquid evaporates or you’re too hungry to wait any longer.  Put some cheese or a dollop of sour cream on top if you’re feeling fancy.  Makes a ton–will feed you for a week!

Downstairs Mix-up

A Lazy Original!  This recipe was named after that infamous modern gentleman, Old Gregg.  I just threw what was in my cabinet in a pan, and viola!

1 can chickpeas

A few tablespoons of vegetable oil (so it doesn’t stick)

1 tsp-1TBSP of crushed red pepper or hot sauce (to taste)

Salt, pepper, and garlic (to taste)


Directions

Put all ingredients in a skillet/fry pan.  Cover and simmer on medium heat, stirring occasionally.  Cook until some of the liquid evaporates or you’re to hungry to wait any longer.  Serve on it’s own or over rice.  Makes about 4 servings.
